Bacteria in the genus Pectobacterium are well known for their ability to produce different types of pectic enzymes and cause soft rot on a large number of fleshy fruits, vegetables and plants. This is an eight day sequence of a baked potato infected with the soft rot bacteria. Images were taken at 10 minute intervals.
